- Vamos hacer la salsa de guisantes, en una sartén echamos un buen chorreón de aceite de oliva virgen extra cuando esté caliente echamos la cebolla y el ajo bien picado rehogar, cuando esté listo echamos un buen chorreón de vino Blanco, yo utilice albariño, cuando se evapore el alcohol echamos los Guisantes y el caldo de pescado, rectifica de sal y dejar reducir
- Pasado los 30 minutos vamos a por las albóndigas, vamos haciendo bolas y pasándolas por harina y a freír en aceite bien caliente hasta que estén doradas
- Las ponemos en papel absorbente y las emplatamos sobre una cama de salsa de guisantes
